Egg and Spinach Breakfast Burrito
Start your day off right with this easy and protein packed breakfast burrito.
Ingredients:
- 2 large eggs
- 1 cup fresh spinach, chopped
- 1/4 cup diced bell peppers
- 1/4 cup diced onions
- 2 whole wheat tortillas
- 1/4 cup shredded cheddar cheese
- Salt and pepper, to taste
- Salsa or hot sauce (optional)
Instructions:
1. In a small bowl, whisk the eggs until well beaten. Season with salt and pepper.
2. Heat a non-stick skillet over medium heat and spray with cooking spray.
3. Add the diced bell peppers and onions to the skillet and sauté for about 2-3 minutes until they start to soften.
4. Add the chopped spinach to the skillet and cook for another 1-2 minutes until wilted.
5. Push the vegetables to one side of the skillet and pour the beaten eggs into the other side. Scramble the eggs until cooked through.
6. Warm the tortillas in a dry skillet or microwave for a few seconds to make them pliable.
7. Divide the scrambled eggs and vegetable mixture evenly between the tortillas.
8. Sprinkle shredded cheddar cheese on top of the eggs and vegetables.
9. Roll up the tortillas tightly, tucking in the sides as you go.
10. Serve the breakfast burritos immediately. You can enjoy them as is or serve with salsa or hot sauce for added flavor.
Note: You can customize this recipe by adding other ingredients such as diced tomatoes, avocado, or cooked bacon for extra protein and flavor.
