Grilled Chicken & Vegetable Wrap
Ingredients:
- 2 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- Salt and pepper, to taste
- 4 whole wheat tortillas
- 1/2 cup hummus
- 1 cup mixed salad greens
- 1/2 cup sliced cucumber
- 1/2 cup sliced bell peppers
- 1/4 cup sliced red onion
- 1/4 cup crumbled feta cheese (optional)
- Fresh lemon juice, for drizzling
Instructions:
1. Preheat the grill or grill pan over medium-high heat.
2. Brush the chicken breasts with olive oil and season with salt and pepper.
3. Grill the chicken for about 6-8 minutes per side or until cooked through. Remove from the grill and let it rest for a few minutes. Slice the chicken into thin strips.
4. Warm the tortillas in a dry skillet or microwave for a few seconds to make them pliable.
5. Spread 2 tablespoons of hummus onto each tortilla, leaving a border around the edges.
6. Layer the sliced chicken, salad greens, cucumber, bell peppers, red onion, and feta cheese (if using) onto each tortilla.
7. Drizzle with fresh lemon juice for added flavor.
8. Roll up the tortillas tightly, tucking in the sides as you go.
9. Cut the wraps in half and serve immediately. Enjoy!
Note: You can customize the vegetables and add any other desired toppings such as avocado, tomatoes, or sprouts.
